MEAL PLAN MENUS, ECUMENICON 2009
(Items subject to change, but this is what we’ve started shopping for….)

Meal codes:
VN=vegan-acceptable (no animal products or honey)
Vg=vegetarian dish (probably has eggs or dairy; check display cards)
C=contains meat/fish/poultry/shellfish (for the carnivores)

FRIDAY, SATURDAY, and SUNDAY BREAKFAST

1. Old-fashioned oatmeal, with at least 6 yummy toppings/stir-ins available per meal

2. Coco-Wheats hot cereal (a Midwestern staple: lightly chocolate-flavored!)

3. Bagels and neat stuff for them (butter, jellies & jams, peanut butter, cream cheese, etc.)

4. Hard-cooked eggs

5. Milk (fresh; probably 2%) and soyamilk, for cereals and coffee

6. Gorgeous fresh fruits….succulent, sweet, healthful, and plentiful

7. Brewed coffee (regular and decaf); ice tea (made from brew, NOT instant); hot decaf tea; herbal
teas.

8. Artificial sweeteners, non-dairy creamer, and soyamilk for coffee will also be available for use, along with some of Auntie Arwen’s best coffee sprinkle spices!

(Sunday brunch) will probably also have a range of miscellaneous items carried over from last night’s supper. Yes, we’re bringing a microwave.

FRIDAY LUNCH

1. C Mexicali mix—savory beef burger, beans, & veggies (no cheese), w/salad greens

2. Vg - Egg salad (no pasta)

3. VN/Vg - Italian pasta & vegetable mix (with cheeses for Vg option), with salad greens

4. Vg –Curried chickpeas and fruit, in yogurt sauce

5. VN –Spicy orange hummus (low-fat version)

6. VN — Tabbouleh (bulgur), w/lemon-cinnamon dressing (No onions!)


ALSO SERVING AT THE LUNCHES AND SUPPERS—

• Yummy mixed greens for salads, plus a nice assortment of oils and flavored vinegars

• Plenty of fresh vegetables and fruits (an even better crop than last year!)

• Brewed coffee (regular and decaf); ice tea (made from brew, NOT instant); hot decaf tea; herbal teas; Coke, Pepsi, & other major brands (will have some caffeine-free & diet versions). Artificial sweeteners, non-dairy creamer, and soyamilk for coffee will also be available for use, along with some of Auntie Arwen’s best coffee sprinkle spices!

• We expect to be having some Amish home-made gingerbread as a lunch/supper dessert.

FRIDAY DINNER

1. C — Oriental beef & crisp veggie salad, soy-ginger vinaigrette, on salad greens

2. VN — Asian noodle salad w/veggies, in a spicy peanut sauce

3. C — Savory classic chicken salad with rice, with salad greens

4. C — Tuna-white bean salad, with red-wine vinaigrette dressing, with salad greens

5. Vg — Curried chickpeas and fruit, in yogurt sauce

6. VN — Spicy orange hummus (low-fat)

7. VN — Tabbouleh (bulgur wheat), w/lemon-cinnamon dressing (No onions!)

SATURDAY LUNCH

1. C — Zingy chicken & pasta salad, with apples and triple-berries, and salad greens

2. VN/C — Italian pasta & vegetable mix (with pepperoni for C option), with salad greens

3. Vg/VN — Mixbeans, 3 ways—that’s a six-bean melange…twice as good as 3-bean salad!

4. Vg — Add some pesto to your bowl, and top with parmesan

5. Vg — Try some ranch dressing, and stir in some feta cheese crumbles

6. VN — Or enjoy the melange with your choice of oils, fancy vinegars, and other toppings

7. VN — Minty classic tabbouleh (bulgur wheat) (No onions, but with fresh mint)

8. Vg — Sun-dried tomato hummus (low-fat version; contains yogurt)

SATURDAY DINNER

1. C — Shrimp & rice salad with crisp veggies, creamy dill-flavored sauce, on greens

2. C — Curried chicken salad with tropical fruits (no pasta), with salad greens

3. C — Classic ham-pasta salad with crispy fresh veggies, and salad greens

4. Vg/VN — “Vegetarian Surprise”—remember eating “Mystery Meat” in college? Well, this ISN’T a variation on that theme (g). But expect *something nice* for the non-carnivores—we’re still working out some details….

FREQUENTLY ASKED QUESTIONS

Q. I’m not on the food plan yet. Is it too late to sign up?—–

A. No problem! We will be accepting add-ons to the food plan until March 22 (the Sunday before the conference) Contact Charles Butler at 240-764-5748 to sign up.

Q. Can I just get in on just ONE or TWO of the meals?

A. We plan to sell a limited number of single-meal tickets during the conference itself, in case you want to join in the fun and fellowship.

a. Breakfasts: $5.00 per person per meal.
b. Lunches: $7.00 per person per meal.
c. Dinners: $8.00 per person per meal.

Q. What is Ecumenicon/NomNom Café doing about “going Green”?

A. We strongly encourage people to bring their favorite personal water bottles and coffee mugs. We will have some on site.

There will be a limited amount of commercial bottled water available. We encourage you to mark your bottle and keep refilling it from the huge “water buffaloes”.

Q. What if I have specific allergies?

A. Unfortunately, we are not able to predict non-organic sources. If you need organically grown produce, and can find it cheap in bulk, we are happy to use such sources, but our supplies are limited.

Q. What are we doing about waste paper?

A. NomNom will be serving soda at mealtimes from 2-liter bottles, which will reduce packaging waste. We also have “wickerbacks” for plates, so we can use eco-friendly paper plates, instead of foam!

The site manager indicated that they DO have onsite bottle/can recycling available, along with paper/cardboard.

Q. Where’s the nearest McDonald’s?

A. [Gargoyle-cat is typing now] My mommy can’t answer that question right now. She’s sick with **rabies** or something, because she’s frothing at the mouth, chewing the carpet, and snarling.
